First Prize Brazilian Feijoada

1 pound black beans
1 onion, large chopped
2 slices bacon, fried
1 pound hot smoked sausage link, cut in 3/4 inch pieces
1 tomato, diced

Soak beans overnight, rinse. Add onions, bacon and sausage. Saute fresh tomato in drippings and add. Salt to taste, covered for about 5 hours. Serve over cooked rice.
