East West Stir Fry

1 pound extra lean ground beef
3 tablespoons oil
1/2 cup onion, chopped
1/2 cup celery, diagonally sliced
1 carrot, cut into strips
1/4 pound green beans, sliced
4 mushroom, sliced
1/2 cup chicken broth
1 tablespoon honey
1/4 cup soy sauce
1 tablespoon cornstarch
2 tablespoons water
1 10 ounce packa frozen spinach
3 cups cooked rice
peanuts, chopped

Serving Size : 4

Shape beef into one large patty. Heat 1 tablespoon of oil in wok over high heat. Add patty; brown 2-2-1/2 min. on each side. Break meat into chunk and stir-fry for 30 sec. Remove and set aside. Pour 2 tablespoon oil into wok. When sizzling, add onion, celery, carrot, green beans and mushrooms. Stir-fry 2 min. Pour in broth and reduce heat. Cover and steam 2-3 min. Stir occasionally. Stir in honey, soy sauce and cornstarch dissolved in water. Return meat to wok. Place spinach on top of meat and vegetables. Cover and steam for 1 min. Uncover and stir spinach into sauce. Serve over rice Sprinkle each serving with chopped peanuts.
