3 ripe avocados
3 tablespoons lime juice
6 spring onions; very finely chopped
1 chilli; seeded and minced
1 tablespoon sun-dried tomato paste
50 g cheddar cheese; finely grated
2 rashers smoked bacon; *
2 tablespoons soured cream
3 tablespoons fresh coriander leaves; chopped
1-2 sprigs fresh coriander leaves; to decorate
* grilled until very crisp and finely chopped
Yield: 6 servings
Pit and peel the avocados, remove the pulp to a large bowl and mash with the lime juice. Add all the remaining ingredients and fold well to ensure they are thoroughly combined. Chill for at least an hour and then serve. Alternatively place all the ingredients in a food processor and blend for 10-20 seconds.
