100 gm anchovy fillets
1 teaspoon garlic, crushed
1 tablespoon olive oil
2 tablespoons butter
1 tablespoon lemon juice
salt, pepper
4 slices white bread
butter
Combine anchovy, garlic, olive oil and pound to a smooth paste. Season with lemon juice, salt and pepper.
Toast bread on one side and, while still hot, spread with anchovy butter.
Place on a tray and toast in a hot oven for 4 minutes.
Cut into triangles, sprinkle with finely chopped parsley and serve.
