500 g sweet potatoes, cut into wedges 1 lb
30 ml butter, melted 2 tbsp
30 ml orange juice 2 tbsp
30 ml packed brown sugar 2 tbsp
5 ml ground cinnamon 1 tsp
1 ml ground nutmeg 1/4 tsp
1.4 L mini marshmallows 5 1/2 cup
In boiling water; cook sweet potatoes until just tender. Drain. Place potatoes on greased baking dish.
In a small bowl; blend butter, juice, sugar, cinnamon and nutmeg. Pour over potatoes. Bake in preheated 350 F (180 C) oven for 15 minutes.
Top with marshmallows. Bake 10 minutes more or until golden brown.
