1.4 kg boneless pork shoulder roast 3 lb
500 ml onions, sliced 2 cup
15 ml butter 1 tbsp
3 apples, peeled & thickly sliced
5 ml dried thyme 1 tsp
salt & pepper
Trim excess fat from pork. In deep 12 cup (3 L) microwaveable casserole, microwave onions and butter at High for 4 minutes or until softened, stirring once. Scatter apples over top; nestle roast in apples. Sprinkle with thyme.
Cover and microwave at High for 5 minutes. Microwave at Medium (50%) for 1 hour or until thermometer registers 160 to 170 F (71 to 75 C), turning roast over halfway through and rotating dish twice.
Let stand, covered, for 10 minutes. Season with salt and pepper to taste. Slice meat and arrange on platter; surround with apple mixture.
