Egg and Cheese Puffs

4 eggs, lightly beaten
75 ml flour 1/3 cup
15 ml baking powder 1 tbsp
salt & pepper to taste
375 ml cheddar cheese, grated 1 1/2 cup
1 cooking onion, diced

Combine eggs, flour, baking powder, salt and pepper until just mixed. Fold in grated cheese and onion. Put a small amount of cooking oil in a fry pan, drop in approximately 1/4 cup (50 ml) of the batter, let brown on one side, flip and brown on the other side. Continue until batter is finished. Keep warm until served.
