A tasty and colorful salsa that goes well with chicken, beef or pork.
1 cup whole kernel corn
1 small red onion, chopped
1/4 cup chopped fresh cilantro
Juice of two limes
1 tablespoon olive oil
1 medium avocado, cut into bite-sized pieces
1 large clove garlic, finely minced
1 (16-ounce) can black beans, drained and rinsed
Salt and freshly ground black pepper to taste
Mix all ingredients together. Cover and let stand at room temperature for 30 minutes before serving.
