3 medium zucchini, thinly sliced (about 1 1/2 pounds)
1/4 cup chopped onion
1/4 cup chopped green pepper
!/4 cup chopped celery
1 tablespoon chopped pimento (optional)
1/3 cup cider vinegar
1/4 cup sugar
1/4 cup vegetable oil
1 tablespoon white wine vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
Dash hot pepper sauce
In glass bowl, combine first 5 ingredients; toss lightly.
Combine cider vinegar and next 6 ingredients; mix well and pour over zucchini mixture. Cover and chill 8 hours, stirring occasionally.
Makes 4 to 6 servings.
