1 (18.25-ounce) package yellow cake mix
2 large eggs
1/3 cup vegetable oil
1 (3.5-ounce) package instant vanilla pudding mix
1 cup milk
1 (8-ounce) package cream cheese, softened
1 (8-ounce) container non-dairy whipped topping
1 (4-ounce) can pineapple chunks, crushed
1/4 cup chopped walnuts
1/4 cup sweetened flaked coconut
Prepare yellow cake mix according to package.
Combine instant vanilla pudding mix with milk. Stir in softened cream cheese; mix well. Fold in nondairy whipped topping and spread on the cooled cake.
Top with crushed pineapple chunks, chopped walnuts and flaked coconut.
Makes 12 servings.
