1 head green, red leaf lettuce or mixture
250 ml ripe olives 1 cup
3 tomatoes, cut into wedges
125 ml red onion, thinly sliced 1/2 cup
1/2 cucumber, peeled & cut into wedges 1/2
GREEK DRESSING
125 ml olive oil 1/2 cup
50 ml lemon juice 1/4 cup
1 garlic clove, minced
5 ml dried oregano leaves 1 tsp
salt & pepper to taste
In a large bowl; toss greens, olives, tomatoes, onion and cucumber.
In a small bowl; blend dressing ingredients together. Pour dressing on vegetables, gently mixing.
