1/2 cup raw lentils
1 medium onion, chopped
3 tablespoons vegetable oil
3 hard-cooked eggs
1/2 cup chopped walnuts
Cook lentils according to package directions; drain. Set aside.
Heat oil in a small skillet on medium-high heat. Add onion and cook until softened. Remove from heat.
Using a food processor fitted with the metal blade, process all ingredients until smooth. Cool. Serve with crackers.
Yield: about 1 1/2 cups.
