Honey Roasted Reds

500 g red potatoes, quartered 1 lb
25 ml onion, diced 2 tbsp
25 ml butter, melted 2 tbsp
15 ml honey 1 tbsp
5 ml dry mustard 1 tsp
salt & pepper to taste

Lay potatoes in a single layer in greased baking dish. In a small bowl; combine onion, melted butter, honey, mustard, salt and pepper; drizzle over potatoes.

Bake in preheated 375 F (190 C) oven for 35 minutes or until tender, stirring halfway through the cooking time.

Serves 4
