450 g strained Greek yogurt
1/2 cucumber; grated and drained
1 tablespoon lemon juice
1 tablespoon fresh mint; chopped
1 clove garlic; crushed
salt and fresh ground black pepper
mint sprig and cucumber slices; to garnish
pita breads; to serve, optional
Yield: 6 servings
Mix yogurt, cucumber, lemon juice, mint, garlic and seasoning together. Place in a serving dish and chill until required. Serve garnished with mint and cucumber slices. Serve with pita bread if wished.
