Turkey Meatloaf

15 g butter
500 g minced turkey
1 tablespoon Worcestershire sauce
2 carrots; grated
110 g peas
2 tablespoons tomato puree
50 g raw white rice; cooked
110 g cottage cheese
3 eggs; beaten well

Yield: 4 servings

Pre-heat oven to 180 C / 350 F / Gas 4. Grease a 900 g loaf tin. Cook the turkey in the butter then add the Worcestershire sauce. Cook for 6-8 minutes then add the vegetables and puree. Cook for another 5 minutes then turn off the heat. Leave to cool for about 5 minutes and stir in the remaining ingredients. Press into the loaf tin, cover and bake for 45 minutes. Allow to stand for 5 minutes before turning out.

NOTE:
Other minced meats work just as well.
