75 ml bulgur, fine grind 1/3 cup
water to cover bulgur
500 ml fresh parsley, finely chopped 2 cup
250 ml english cucumber with peeled, finely chopped 1 cup
175 ml tomato, finely chopped 3/4 cup
125 ml red pepper, finely chopped 1/2 cup
60 ml green onion, finely chopped 1/4 cup
60 ml radish, finely chopped 1/4 cup
5 ml dried mint leaves 1 tsp
60 ml lemon juice 1/4 cup
15 ml olive oil 1 tbsp
2 ml salt 1/2 tsp
In a small bowl, add bulgur. Add water. Stir. Let stand for about 20 minutes until tender. Drain well and set aside. Add parsley, cucumber, tomato, red pepper, onion, radish and mint leaves. Toss well.
In a small cup, combine lemon juice, olive oil and salt. Drizzle over parsley mixture. Add bulgur. Toss until coated.
