Sponge Candy

1 cup sugar
1 cup dark corn syrup
1 Tablespoon cider vinegar
1 Tablespoon baking soda

COATING
12-18 ounces semi-sweet or milk chocolate chips
2-3 Tablespoons shortening

Heat sugar, corn syrup, and vinegar to boiling in 2 qt. saucepan over medium heat, stirring constantly, until sugar is dissolved. Boil without stirring, to 300′ on candy thermometer (hard ball stage); remove from heat. Quickly stir in baking soda thoroughly. Pour mixture into ungreased 13x9x2 inch pan. Do not spread! Cool and break into pieces. Can then be dipped in chocolate coating if desired.

COATING
Melt chocolate and shortening over low heat; stirring constantly. (use 1 Tbls of shortening for every 6 ounce of chocolate) When mixture is smooth remove from heat. Dip each piece of candy into coating. Then either place them on foil or in paper candy-cups and allow to harden.
