4 cups mini marshmallows
1 pint low-fat chocolate ice cream
1 pint low-fat vanilla ice cream
12 graham cracker sheets
2 ounces semi-sweet chocolate
Soften the ice creams just enough to be workable, and using a wooden spoon, combine with mini marshmallows in a large bowl. Stir just enough for the chocolate and vanilla to swirl. Set back in the freezer for a short while, making sure it doesn’t harden too much.
Break the graham crackers into quarters, and line 6 bowls with them. The little rectangles poking up will serve as spoons.
On a cutting board, shave the semi-sweet chocolate into curls. Divide the ice cream into the bowls as desired, and top with the chocolate shavings. Eat with graham cracker “dipping spoons.”
