40 smoked scallops (about 1/2 lb)
1/2 cup mayonnaise
1 teaspoon curry powder
1 tablespoon snipped chives
1 teaspoon sherry vinegar
salt and ground black pepper
Mix all ingredients (except scallops) with 1/4 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Place 10 smoked scallops on each plate. Spoon a portion of the Curry Chive Mayonnaise alongside the scallops and serve.
