4 x 2 ounce pieces Sea Bass
1 tablespoon butter
1 tablespoon olive oil
1 tablespoon dry white wine
1 cup chicken stock
1 cup fresh chanterelles
Place Sea Bass, butter, oil white wine, stock and chanterelles in a large casserole dish. Slowly bring to simmer and cover until Sea Bass is just done – 4-5 minutes. adjust seasoning and serve.
Makes 4 servings.
