500 g potatoes, scrubbed & cut into large chunks 1 lb
40 ml butter or margarine 3 tbsp
15 ml fresh rosemary leaves 1 tbsp
3 cloves garlic, minced
salt & pepper to taste
In a large baking dish; add potatoes, butter, rosemary, garlic, salt and pepper. Toss well.
Roast in preheated 400 F (200 C) oven for 45 minutes, turning occasionally until potatoes are golden brown, tender and slightly crispy on the outside.
