Delicious, when paired with Bella Sera® Delle Venezie Cabernet Sauvignon

serves 4

1 tablespoon Olive oil
2 tablespoons Butter
1 Small Onion
3 ounce Pancetta, cut into cubes
6 cups Chicken stock
1 cup Arborio rice
1 tablespoon Chopped parsley
2 cups Fresh or frozen peas
1/2 cup Grated parmesan cheese

In large saucepan, heat olive oil and butter. Add onion and pancetta and sauté until softened, about 5 minutes. Add stock and rice. Bring to a boil and then reduce heat. Simmer until rice is almost cooked and most of liquid is absorbed. Add parsley and peas and cook until peas an rice are tender. Stir in parmesan cheese and serve.
