Rabbit Sausage

3 pounds rabbit meat
3 feet small hog casings
1 teaspoon salt
1/2 teaspoon freshly ground white pepper
1/2 teaspoon ground black pepper
1/2 teaspoon thyme
1/2 teaspoon freshly grated ginger
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley

Prepare casings. Mix ingredients. Grind with fine disk and stuff into casings. Twist off into 3 inch links. Pan fry in vegetable oil.
