1 tbsp butter
1 cup cooked pumpkin (mashed)
1/2 cup sugar
1 egg (beaten)
1/2 teaspoon salt
2 cups self raising flour
Grease a scone tray (cookie sheet) preheat oven to 210c (425f), cream together butter and sugar, until light and fluffy. Add egg and beat well, add pumpkin, flour and salt. Then fold by hand, knead lightly and cut into 2cm (1″) squares. Place close together on tray, bake until well risen and golden on top (12-15 mins)…serve with butter…
