Parkin

1 oz plain flour
1/2 teaspoon cinnamon
1 teaspoon (heaped) ground ginger
3/4 teaspoon sodium bicarbonate
1 oz oatmeal; fine or medium
1 oz black treacle
1 oz dark brown sugar
1 oz butter or margarine
1 each egg
5 tablespoons milk

Sieve together flour, bicarbonate of soda and spices. Add oatmeal. Melt butter, treacle and sugar in a saucepan and add, with the beaten egg, to the dry ingredients. Lastly stir in the milk to give a fairly soft batter. Turn into a 9 inch cake tin lined with grease-proof paper or baking parchment. Bake at 350 deg F for 25 minutes. Turn down to 325 deg F until a knife or skewer, when inserted, comes out clean. My recipe says this should take a further 20-30 minutes, but I always find it takes longer than this. Leave overnight in closed container before eating.
