Morning Glory Muffins

2 cups flour (can use part whole wheat flour)
1-1/4 cups sugar (can use part brown sugar)
2 teaspoons soda
2 teaspoons cinnamon
2 cups grated carrots
1/2 cup raisins, soaked 15 min. in hot water and drained
1/2 cup pecans
1/2 cup coconut
1 apple, grated
3 eggs
1 cup oil
2 teaspoons vanilla

Combine dry ingredients, add fruit, etc., then the combined liquids. Bake at 400 degrees for about 20-25 minutes.
