Maple Chicken

4 chicken breasts, skin removed
15 ml vegetable oil 1 tbsp
15 ml butter 1 tbsp
2 shallots, chopped
50 ml white wine 1/4 cup
75 ml chicken broth 1/3 cup
125 ml maple syrup 1/2 cup

In large skillet; heat butter and oil. Add chicken and brown over high heat for 5 minutes.

Place chicken in casserole dish. Bake in preheated 350 F (180 C) oven for approximately 10 minutes or until fully cooked.

In same skillet; cook shallots. Add wine and broth. Cook until liquid is reduced to half. Add maple syrup. Cook over medium heat until mixture begins to boil. Place chicken on serving plate and cover with sauce.

Serves 4
