1 stick butter or margarine
1 cup sugar
2 eggs
1/2 cup milk
1-2/3 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
grated rind of one lemon
dash of lemon juice
Cream butter and sugar. Add eggs and milk, mix well. Add remaining ingredients, mix until blended. Bake in a greased loaf pan at 350 degrees for 1 hour. You can also use 3 small loaf pans and bake for 40 minutes.
Topping:
Juice of one lemon
1/4 cup sugar
Bring to a boil until sugar melts. Pour, while hot, over the top of the bread when it is taken out of the oven.
HINT:
Poke a few holes in the bread so topping will seep in.
