1 medium zucchini, sliced thinly
1 small green pepper, sliced
1 cup fresh, sliced mushrooms
1 small eggplant, peeled and sliced (optional)
1 teaspoon minced garlic
1 cup prepared spaghetti sauce (low fat, chunky or garden style)
1 teaspoon oregano
1 cup low fat, shredded mozzarella cheese
1/4 cup fat free Parmesan cheese
Combine all ingredients except cheeses in two quart casserole. Microwave on high for six to eight minutes. Sprinkle with cheese. Microwave for one more minute.
