Makes 4 servings
1 pound green beans
2 ounces pimientos, drained and diced
2 tablespoons shallots, or onion, diced
1 tablespoon white wine vinegar
1-1/2 teaspoons Dijon mustard
1/8 teaspoon pepper
Place steamer basket in 1/2 inch water in saucepan or skillet. (Water should not touch bottom of basket.) Place green beans in basket. Cover tightly and heat to boiling; reduce heat to low. Steam 10 to 12 minutes or until crisp-tender; drain. While beans are steaming, mix remaining ingredients. Toss beans with pimiento sauce. Serve immediately.
