Low Fat Dried Fruit Gratin

1/2 cup rum
1/2 cup water
3 cups mixed dried apricots and pitted prunes
2 tablespoons butter
1/4 cup sugar
1 egg
1/2 cup milk
1/4 cup flour
1/8 teaspoon salt

Preheat the oven to 425 degrees. Combine the rum and water in a bowl and add the fruit. Let soak for about 20 minutes, or until the fruit has plumped. Remove and drain. Use 2 tablespoons butter to heavily butter a 9-inch pie pan. Sprinkle 2 tablespoons of the sugar over the bottom. Place the fruit in the pan. Make the batter by beating together the egg, milk, flour and salt. Pour the batter over the fruit, then sprinkle on the remaining 2 tablespoons sugar. Bake for 15 minutes. Serve hot or warm.
