Makes 8 servings
1 cup fat free sugar free plain yogurt
1 tablespoon white wine vinegar
1 tablespoon olive oil, or almond oil
1/2 clove garlic, crushed
1 cup chopped cucumber
1 teaspoon dill weed
1/2 teaspoon dried mint, leaves (see Note)
Combine yogurt, vinegar and oil in a small bowl. Whip with wire whisk until well combined and smooth. Mix garlic, cucumber and dill into dressing. Then mix in mint, if desired.
NOTE:
2 teaspoons chopped fresh mint may be used instead
