This drink was developed in February 2000 to celebrate California Kiwifruit Day (which occurs every year on February 2nd).
1 kiwifruit, pared and sliced
2 or 3 teaspoons granulated sugar
1 tablespoon lime juice
1 or 2 ounces rum (optional)
8 ice cubes, crushed
2 kiwifruit slices
Blend all ingredients except kiwifruit slices in a blender until smooth. Serve in stemmed glasses; garnish edge of each glass with kiwifruit slice.
Make 2 servings.
*Optional: Add 1 drop green food coloring for extra color
