500 g potatoes, peeled & cut into chunks 1 lb
225 g parsnips, peeled & cut into chunks 1/2 lb
225 g carrots, peeled & cut into chunks 1/2 lb
1 kg sweet potatoes, peeled & cut into chunks 2 lb
30 ml olive oil 2 tbsp
5 ml salt 1 tsp
In a large pot; add potatoes, parsnips and carrots. Cover with cold water. Bring to boil and cook 10 minutes. Add sweet potatoes and cook an additional 10 to 15 minutes or until tender. Drain.
Add oil and salt; mash together. A little bit of milk could be added if mixture is too thick.
