Yields: 1 cup
4 ounces soft fresh goat cheese, at room temperature
1/4 cup buttermilk
2 teaspoon white wine vinegar
1 teaspoon Dijon mustard
1 teaspoon minced fresh thyme
1 teaspoon minced fresh parsley
pinch of grated lemon zest
kosher salt to taste
black pepper to taste
Whisk all ingredients together in a small bowl. Thin if necessary with additional buttermilk. Taste and adjust the seasoning. Use immediately or cover and refrigerate.
