Flan Pastry

(see also Fresh Pear Flan)

1-1/2 cups sifted all-purpose flour
1 teaspoon salt
2 tablespoons icing sugar
1/2 cup butter
2 egg yolks
1 teaspoon grated lemon rind

Sift then measure flour; resift with salt and icing sugar. Cut in butter finely. Beat yolks. Stir into flour mixture with lemon rind. Mix well. Form into ball. Chill 3 hours. Roll out and line bottom of pan. Bake as directed for Fresh Pear Flan.
