500 g garlic cloves about 1 lb
1/2 l white wine vinegar (2 cups)
50 g sugar 1-1/2 oz
1 teaspoon salt
20 white peppercorns
20 black peppercorns
20 allspice berries
4 bay leaves
2 cloves
Peel the garlic. Bring the vinegar and 1/2 cup of water to the simmer.
Add spices, stir. Add garlic cloves, bring to a boil and simmer for one minute. Fill garlic in a stoneware or glass jar; cover with liquid. Close with a tight fitting lid; store in a cool place.
Can be stored for several months.
