1/2 cup Brown sugar, packed
1/4 cup Margarine
1 Egg
3/4 cup DOLE Pineapple Juice
1 teaspoon Grated orange peel
1-1/2 cups All-purpose flour
1/2 cup Whole wheat flour
1-1/2 teaspoons Baking powder
1/2 teaspoon Baking soda
1/4 teaspoon Salt
1/4 teaspoon Ground cinnamon
1 cup DOLE Raisins
Yield: 6 servings
BEAT sugar and margarine until light and fluffy. Beat in egg, juice and orange peel.
COMBINE remaining ingredients; stir into juice mixture until moistened. Spoon batter into six muffin cups coated with cooking spray.
BAKE at 375’F. 25 minutes. Cool on rack; serve warm.
