Diabetic Sweet Potato Revenge

2 (16 oz.) cans sweet potatoes or yams, drained and mashed
1/2 cup orange juice concentrate
1/2 cup skim milk
1 teaspoon vanilla
1 teaspoon cinnamon
2 tablespoon chopped pecans

Preheat oven to 375 degrees. Spray an 11×7 baking dish with cooking spray. In a mixing bowl, combine all ingredients except pecans. Spread sweet potato mixture in prepared dish. Sprinkle pecans on top. Bake for 30 minutes.

Makes 8 (3/4 cup) servings
