1 red bell pepper, finely diced
2 cs. low-fat cream of celery or cream of broccoli soup
2/3 c. water
10 ozs. couscous
In saucepan, stir together bell pepper, soup and water; bring to a boil. Add couscous, stir, cover and remove from heat. Let sit 5 minutes. Stir before serving, adding salt and pepper to taste.
