1 zucchini, peeled & thickly sliced
15 ml olive oil 1 tbsp
50 ml parmesan cheese, grated 1/4 cup
250 ml fine bread crumbs 1 cup
salt & pepper to taste
olive oil for frying
Coat zucchini slices with 1 tablespoon (15 ml) olive oil.
In a plastic bag; add bread crumbs, cheese, salt and pepper. Add zucchini slices to crumbs and toss.
Heat small amount of oil in skillet. Add zucchini slices and fry for about 15 minutes, turning half way through.
