1 ounce butter
shallots
1 large teaspoon sugar
Drop the shallots into boiling water for a few seconds, this makes them easier to peel. Peel them. Melt the butter in a small saucepan. Add shallots and sprinkle with sugar, season with salt and pepper then pour over enough cold water to just cover shallots. Bring to boil and cook over a low to medium heat, stirring occasionally, until all the liquid has evaporated and the shallots are covered with a sticky golden glaze.
Serve with grilled or barbecued steak.
