Cajun Quinoa

125 ml onion, chopped 1/2 cup
5 ml olive oil 1 tsp
6 garlic cloves, minced
300 ml quinoa, rinsed & drained 1 1/4 cup
250 ml carrots, coarsely shredded 1 cup
5 ml cajun seasoning 1 tsp
1 medium zucchini, quartered lengthwise & sliced
1 can golden hominy, rinsed & drained (14 oz / 398 ml)
15 ml fresh thyme or oregano, snipped 1 tbsp

In a medium saucepan, cook onion in hot oil over medium heat for 3 minutes. Add garlic, cook for 1 minute more. Stir in quinoa, carrots, cajun seasoning and 2 cups (500 ml) water. Bring to boil, reduce heat. Simmer, covered, 10 minutes. Stir in zucchini, hominy and thyme. Simmer, covered, for 5 minutes more or until quinoa and zucchini are tender and liquid is absorbed. Season to taste with salt.
