Butterscotch Pudding

2/3 cup brown sugar, packed
2 tablespoons cornstarch
1/8 teaspoon salt
2 cups milk
2 large egg yolks, slightly beaten
2 tablespoons butter, softened
1 teaspoon vanilla

Combine sugar, cornstarch, and salt in 2-quart saucepan. Combine milk and egg yolks, then gradually stir into the dry ingredients. Cook over medium heat, stirring constantly, until mixture comes to a boil. Continue to boil for one minute, stirring constantly. Remove from heat, and stir in butter and vanilla. Pour pudding into four serving dishes, and chill.
