1 head broccoli, cut into bite size pieces
1 lb penne pasta, cooked & drained
1 red pepper, seeded & chopped
1/2 cup orange juice
1/4 cup red wine vinegar
2 tablespoons olive oil
1/4 cup pine nuts, toasted
Steam broccoli until tender crisp. Remove from heat.
In a large bowl; toss together broccoli, pasta and pepper.
In a small bowl; whisk together orange juice, vinegar and olive oil. Pour mixture over pasta mixture, tossing to coat. Sprinkle with pine nuts.
