Almond Paste

2 cups almonds
1 egg white
1-1/2 cups icing sugar
2 teaspoons lemon juice

Chop almonds very finely, preferably with a blender. Add egg white gradually, then 1 cup icing sugar and lemon juice. Knead with more icing sugar until a soft dough is formed. Roll out to desired shape, about 1/4-inch thick.
