750 g broccoli, cut into bite size pieces 1 1/2 lb
125 ml green onions, chopped 1/2 cup
125 ml butter 3 tbsp
4 eggs, beaten
375 ml half ‘n’ half cream 1 1/2 cup
175 ml dry breadcrumbs 3/4 cup
125 ml grated parmesan cheese 1/2 cup
2 ml salt 1/2 tsp
1 ml pepper 1/4 tsp
.5 ml nutmeg 1/8 tsp
Grease 16 large muffin tins. Cook broccoli. Drain well and chop finely. Sauté onions in butter until soft; combine with remaining ingredients. Fill muffin tins and bake 20 to 25 minutes at 350 F (180 C) or until a toothpick comes out clean. Unmold and turn right side up.
