Preserving Herbs in Oil

Unlike making flavoured oils, this method is used to preserve herbs for use later in the season and into the winter. The herbs are tightly packed in a jar and preserved with olive oil and coarse salt. The oil can be used later for cooking or flavouring pasta. Any large-leafed herb such as sage, basil or mint can be preserved this way.
