500 ml fresh pineapple, cubed in large chunks 2 cup
2 large red pepper, cut into large chunks
2 small zucchini, cut into thick slices
8 bamboo skewers, soaked in water
125 ml butter, melted 1/2 cup
15 ml brown sugar, packed 1 tbsp
5 ml garlic powder 1 tsp
2 ml pepper 1/2 tsp
Alternately thread pineapple, red pepper and zucchini onto skewers.
In a small bowl; combine butter, brown sugar, garlic powder and pepper. Brush mixture onto skewers.
Set skewers on hot greased grill placed over hot BBQ. Cook for 15 to 20 minutes, turning and brushing occasionally with butter mixture, until brown.
