Portions: 1/2 Cup Each
3 cups (1 lb) bacon, chopped
1 quart (1 lb) onions, dry, sliced
3 quart water
6-2 lb pkg (12 lb) beans, green, frozen, cut
2-1/4 tablespoon (1-1/2 oz) salt
3/4 teaspoon pepper, cayenne
1-1/4 gallon (9 lb 15 oz or 1 1/2-No. 10 can) corn, canned, cream corn
Sauté bacon and onions until bacon is partially browned. Add water to bacon and onions; bring to a boil. Add beans, salt, and pepper. Cover. Bring back to a boil; reduce heat and simmer 25 minutes. Add corn; cover; continue cooking 15 minutes. Serve with cooking liquid (pot liquor).
NOTE:
1 lb 3 oz onions, dry, A.P. will yield 1 lb sliced onions.
